With our editor ensconced at the historic Fable hotel during iD Dunedin 2023, it seemed like the perfect time to request a suitably stylish, appropriately themed cocktail recipe to share with our readers.

Set like a jewel at the front of the recently renovated Victorian building, Fable Dunedin’s bespoke bar and restaurant The Press Club pays homage to the city’s original haunt for journalists, editors and publishers from the 1870s.

Custom-made by talented food and beverage manager Jeremy Jourdain, this beautifully moody tipple features rich fruit flavours with a touch of citrus, finished with champagne for a playful fizz.

The darkness


  • 20ml Scapegrace Black gin
  • 20ml Graham’s Six Grapes port
  • 20ml crème de cassis
  • 15ml fresh lemon juice
  • 15ml maraschino cherry syrup
  • Dried raspberry powder, to garnish


Shake with ice, then top up with champagne in a margarita glass.
